I enjoy some nice chopped scallion on foods. White/yellow onions are too acidic for my tastebuds, but GREEN IS IN.

Someday you will have to get a vidalia onion, peel it, cut it in half (sideways), put the halves in a bowl with some butter, salt and pepper, and even a sprinkle of chicken base if you want, then microwave it until it is soft. It is very sweet. All the sharpness disappears.
